What is mead?

Mead is a fermented alcoholic beverage made from honey, water, and yeast. During fermentation, the sugars in the honey are converted into alcohol, similar to how wine is made from grapes. Mead is one of the oldest known alcoholic drinks, with a history dating back several thousand years.

According to the guidelines of the European Mead Makers Association, the ingredients of “Real Mead” consist of honey, water, and yeast. Additional natural ingredients — such as fruits, spices, or hops — may be used during production; however, the honey must provide the primary source of fermentable sugars and the defining character of the beverage.

This is what distinguishes mead from drinks in which honey is used only as a flavoring, or where most of the alcohol comes from other sugar sources. In quality mead, honey is not just an aroma — it is the foundation of the drink.

How should I choose mead as a beginner?

If you are just getting to know mead, it’s worth starting with fruity or semi-sweet varieties, as they offer a more approachable and easy-to-understand flavor profile.

Is mead wine, beer, or a liqueur?

Mead is none of these, but it shares similarities with all three.

  • Like wine, it is a fermented beverage
  • Like beer, it can be made in many different styles
  • The sweeter versions can resemble dessert wines

In reality, it is a completely independent category of drink.

What is its alcohol content?

Mead typically ranges between 8% and 20% ABV, depending on the production method and the amount of honey used.

Is all mead sweet?

No. Mead can be:

  • dry
  • semi-sweet
  • sweet

The level of sweetness is mainly determined by the ratio of honey to water.

What do “third,” “half,” or “two-thirds” mead mean?

This is a traditional Polish classification that refers to the ratio of honey to water.

  • Quarter – 1 part honey / 3 parts water (lighter, drier)
  • Third – 1 part honey / 2 parts water
  • Half – 1 part honey / 1 part water
  • Two-thirds (półtorak) – 2 parts honey / 1 part water (very rich, sweet)

What flavors does mead come in?

Mead can be:

  • traditional (just honey)
  • fruity
  • spiced
  • barrel-aged
  • hopped or modern craft styles

The world of modern mead is extremely diverse.

How should mead be consumed?

Most meads are best enjoyed at around 10–14°C.
Sweeter, fuller-bodied varieties are better slightly warmer, while lighter, fruity meads can also work well chilled.

What kind of glass should be used?

A wine glass or a smaller dessert wine glass best highlights the aromas.

How long does an unopened bottle last?

Most meads can be stored for years and do not spoil. This is especially true for varieties with higher honey content.

Does mead contain added sugar?

The sugar content in real mead comes from the honey, which is converted into alcohol during fermentation. High-quality meads are generally not made with added refined sugar.
